At Will's Cookery, I believe the secret to exceptional meals starts long before the cooking begins—it starts with selecting ingredients at their peak of flavor.

The Seasonal Advantage

When you see "fresh" on my menu, it's not just a trendy phrase—it's my commitment to quality, flavor, and taste. Here's why seasonal eating forms the cornerstone of my cooking philosophy:

Superior Flavor

Produce harvested at peak ripeness delivers unmatched flavor. There's simply no comparison between a January tomato shipped from thousands of miles away and a July tomato that's grown closer to home.

My customers in Shandon and Old Woodlands often tell me they can taste the difference immediately.

Environmental Benefits

Seasonal eating often has a lower carbon footprint than eating out-of-season foods that require long-distance transportation. I try to be mindful of this when planning my menus.

Better Value

In-season produce is typically more abundant and often more affordable. This helps me provide better value while maintaining quality.

Cooking with the South Carolina Seasons

Winter (December-February)

  • Root vegetables: Sweet potatoes, turnips, beets
  • Leafy greens: Collards, kale, mustard greens
  • Citrus: Brightest during the winter months
  • Winter squash: Butternut, acorn, delicata varieties

My Winter Warming Bowl features hearty vegetables that shine in colder months.

Spring (March-May)

  • Early berries: Strawberries start appearing in April
  • Spring vegetables: Asparagus, spring onions, new potatoes
  • Fresh herbs: Mint, cilantro, dill
  • Southern favorites: Spring peas, green beans

Spring's arrival brings my herb-forward dishes that Melrose Heights customers especially enjoy.

Summer (June-August)

  • Summer produce: Tomatoes, corn, okra, field peas
  • Stone fruits: Peaches, plums, nectarines
  • Berries: Blackberries, blueberries
  • Summer squash: Zucchini, yellow squash, patty pan

Summer means my Heirloom Tomato Plate that showcases the vibrant flavors of the season.

Fall (September-November)

  • Hard squashes: Pumpkins, butternut, acorn
  • Apples: Various crisp varieties
  • Root vegetables: Sweet potatoes, carrots, parsnips
  • Fall greens: Collards, kale, mustards

My Autumn Harvest Plate is popular among Lake Katherine families during this season.

My Ingredient Selection Process

When planning my weekly menus, I consider:

  1. What's at peak season - For maximum flavor
  2. Variety and balance - To keep meals interesting week to week
  3. Customer favorites - I listen to what you love
  4. Complementary flavors - Building cohesive, satisfying meals

From Selection to Your Table

How do these fresh ingredients make their way to your dinner plate? Here's my process:

  1. Weekly planning - I create menus based on what's currently available
  2. Careful shopping - I select ingredients with an eye for quality and freshness
  3. Menu development - My weekly offerings are designed around these ingredients
  4. Minimal processing - I let great ingredients speak for themselves
  5. Quick delivery - From my kitchen to your table in the same day

Taste the Difference

The benefits of seasonal eating extend beyond environmental considerations—they transform your dining experience. When you taste a dish made with ingredients at their peak, the flavor speaks for itself.

As Carolyn, a customer from Brandon Acres, recently told me: "I never knew green beans could taste so good until I tried yours. Now I understand what 'fresh' really means."
